Food work has two requirements that pull against each other: the glove must be safe for food contact, and it must survive the blade work that dominates the injury statistics. Both have to be satisfied at once.
Boning, trimming, filleting and portioning put a sharp blade travelling toward the hand that holds the product. The injuries are deep rather than superficial and they usually land on the non knife hand. This is one of the few applications where a high TDM level, E or F, is genuinely justified on the supporting hand.
Caustic cleaners, quaternary ammonium sanitisers and peracetic acid are used at the end of every production run. Handling gloves are not barrier gloves. Wash down teams need EN ISO 374 certified gloves selected against the cleaning chemical in use.
Gloves in direct food contact must be declared suitable for food contact under the applicable regulation, and the declaration is material and food type specific. Colour coding, usually blue, is used so that a glove fragment can be seen in the product stream.

No. Caustic cleaners and sanitisers require a glove certified to EN ISO 374 for the specific chemical. A cut resistant handling glove offers no chemical barrier and will hold the chemical against the skin once it soaks through.
Blue does not occur naturally in most foods, so a fragment of glove is visible in the product stream and on inspection lines. It is a foreign body control rather than a hygiene property.
